Fresh Take Fridays — Handwashing Roulette or Measure the Meaningful: Hand Washes per Employee Hour

About

Motivating foodservice handwashing continues to elude operators and their regulatory partners. Food handlers clearly know why they must wash their hands but are clueless as to how often. Learn how answering the frequency question can provide the missing motivation. Operator risk of a Norovirus outbreak is reduced when Hand Washes per Employee Hour, HW/EH, is measured, monitored, and reported back to the workforce. QMRA (Quantitative Microbial Risk Assessment) is a public health tool that was used to help food service establishments set operational standards based on relevant scenarios. Staff must understand and commit to their HW/EH standard in preparing and serving safe food — is it one, two, or three? This webinar will explore that question.
