CDC’s Environmental Health Specialists Network collected information about food safety perceptions from restaurant food workers. From this information,  we were able to 1) develop a measure of food safety culture in restaurants based on food worker perceptions; 2) identify food worker and restaurant characteristics that were associated with the measures; and 3) investigate how food safety culture affects food safety performance.
