At AFDO’s 114th Annual Educational Conference, there was a panel presentation entitled, “Ensuring Safe Meat and Poultry – A Collaborative Effort”. In follow up to an audience question which was not answered at the time, Larry Hortert, of the US Department of Agriculture has provided a response.
Question: “Are retailers purchasing primal and/or sub-primals treated with post chill interventions for their in-store ground beef exempt from USDA-FSIS E-coli sampling?”
Answer: As stated, the retailer would be subject to MT05 retail sampling.
