Seafood HACCP Course Descriptions:

 

BASIC SEAFOOD HACCP CLASSROOM TRAINING

The Basic Training Course is designed for those persons working in the commercial and regulatory settings or related professions that can influence and/or involve seafood and/or aquacultured product safety. In keeping with the FDA HACCP mandate for fish and fishery products (21CFR Part 123) this course focuses on product processing which can relate to production, importing and additional commerce. Participants that attend the standard three-day course will receive a "Certificate of HACCP Completion". This certificate will be viewed in recognition of training to satisfy the FDA mandatory seafood HACCP regulations. Only courses registered through the AFDO/Alliance training program will be eligible for the AFDO Certificate for HACCP Course Completion.

 

BASIC SEAFOOD HACCP ONLINE TRAINING
The National Seafood HACCP Alliance has developed a Seafood HACCP training course that is available on the Internet. This Internet-based distance education program is designed to be equivalent to the first two days of the “live” three-day
Alliance training courses conducted across the U.S. over the past 5 years. This new alternative training program was developed by the Alliance in collaboration with the FDA, the Association of Food and Drug Officials, New York Sea Grant, and the Cornell University Food Industry Management Distance Education Program.


How the Course Works

Seafood HACCP training is now available on demand. You can register for the Internet course at any time and complete the course materials at your own pace wherever you have a computer with an Internet connection. There are 12 training Modules in the course that cover all of the information on HACCP principles, their application to seafood products, and the FDA regulation presented in the first two days of the regular Alliance training course. After registering, each student will be tracked by their unique Username and Password. Students who complete all 12 Modules will receive an E-mail letter from Cornell acknowledging that they have completed “Segment One” of the Alliance training course.


Those who want to receive a “Certificate of Course Completion” from the Association of Food and Drug Officials to meet the training requirement of the FDA Seafood HACCP regulation will then need to attend a 1-day live “Segment Two” training session conducted by a trained instructor. Your E-mail letter from Cornell showing that you’ve completed the Internet course will be your “ticket” to an AFDO registered “Segment Two” training session.


Firms that already have “HACCP trained” individual(s) can use the Internet course to train additional employees. Your employees can complete the Internet course at work or at home, and you won’t have to send them to a three-day course if AFDO certification is not needed. Experience has shown that HACCP implementation can be more effective when a number of key people in the operation have a good understanding of the system and its requirements.

SEGMENT TWO HACCP CLASSROOM TRAINING
The Segment Two Course is designed as the sequel to the Segment One Basic Internet Course - it is one additional day optional training for students that desire additional training in order to receive the AFDO Certificate of Course Completion. The Segment Two course must be provided in person by a qualified AFDO/Alliance instructor.  The e-mail verification of completion from Cornell University of the online Segment One training is required for admission to a Segment Two course.
 

SANITATION CONTROL PROCEDURES (SCP)

In addition to the three-day course a one-day course has been developed. It is intended to assist the seafood industry and the respective inspection authorities in developing as mandated by the U.S. Food & Drug Administration (21 CFR 123). This regulation is commonly known as the "Seafood HACCP Regulation" which became effective in December 1997. Since this date, seafood processors have been required to "monitor" sanitary control procedures used during processing in order to show conformance with good sanitary conditions and practices. In addition to basic food sanitation and good manufacturing practices, the course features methods to address the regulatory monitoring requirements and encourages development of written SSOP's. Course participants will learn how to draft SSOP's and build monitoring programs for FDA's 8 key sanitary conditions.

 

SEAFOOD HACCP ENCORE TRAINING 

The Seafood HACCP Encore Training Course is a 1-day program designed for processors who have received an untitled or warning letter from FDA or had significant HACCP deviations noted during a FDA inspection of their facility. The course will help expand their knowledge of the fundamental HACCP principles; improve their ability to develop an effective HACCP plan for their processing operation, and is intended to improve compliance with the FDA seafood HACCP regulation. FDA, state regulatory officials, and Sea Grant University personnel will be on hand to provide assistance with problems in developing or implementing a HACCP plan.

SEAFOOD HACCP TRAIN-THE-TRAINER COURSES

The Seafood HACCP Alliance offers International Trainers Courses in Hazard Analysis and Critical Control Point (HACCP), and Sanitation Control Procedures:

 

The trainer courses are open to qualified individuals with educational, professional and training experience in HACCP, or SCP. These courses are particularly helpful to regulatory agency personnel and international trainers who are involved with implementing HACCP, or SCP in order to meet the requirements of the United States Food and Drug Administration's regulation on the "Procedures for the Safe and Sanitary Processing and Importing of Fish and Fishery Products" (21 CFR Parts123 and 1240).


A certificate of trainer course completion will be issued by the Association of Food and Drug Officials to participants in the trainer courses. This certificate will be recognized by both
US state and federal authorities as evidence of special training in preparation to comply with the current US FDA HACCP regulations. Only courses that are registered through the AFDO/Alliance training program with "qualified" instructors will be eligible for the AFDO Certificate for HACCP or SCP Course Completion.
